**Ingredients:**
- 3 ripe bananas
- 1/3 cup vegan butter, melted
- 1/2 cup brown sugar
- 2 tsp vanilla extract
- 2 tbsp soy milk
- 1 3/4 cups bread flour
- 1/4 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 cup chopped walnuts
**Instructions:**
1. **Preheat the Oven:** Set your oven to 425°F (218°C), as noted in the image.
2. **Prepare the Bread Pan:** Grease a loaf pan or line it with parchment paper to ensure the bread doesn't stick.
3. **Mash Bananas:** In a bowl, mash the ripe bananas with a fork until you achieve a smooth consistency.
4. **Mix Ingredients:** In a separate bowl, mix the melted vegan butter with brown sugar and vanilla extract. Add the soy milk and mashed bananas, and stir until well combined.
5. **Dry Ingredients:** In another bowl, sift together the bread flour, baking powder, cinnamon, and salt.
6. **Combine Mixtures:** Gradually combine the dry ingredients with the wet ingredients. Stir until just combined to avoid overmixing.
7. **Add Walnuts:** Fold in the chopped walnuts into the batter.
8. **Bake:** Pour the batter into the prepared loaf pan. Place in the preheated oven and bake. Since 425°F is relatively high for banana bread, check for doneness after about 20-25 minutes to prevent the bread from burning. It's done when a toothpick inserted in the center comes out clean or with a few moist crumbs.
9. **Cool Down:** Allow the banana bread to cool in the pan for about 10 minutes, then remove it from the pan and let it cool completely on a wire rack.
